Homemade ham and potato soup

Okay friends this is a really good one you must make on a cold day which we have too many of this season.


One package cubed ham
One five pound bag red potatoes
2 tbsp flour
3 tbsp butter
Red pepper flakes to taste
Pepper
2 cups shredded cheddar cheese
4 cups milk
Onion powder or onion flakes


First peel and then cut potatoes into edible size pieces

Boil the potatoes til tender, drain and set aside

Now in big pan or pot, I use a big pot, melt butter and add flour to thicken butter, also add onion powder to taste.  I just dump a few tbsp in ...let this melt and cook about two minutes.

Now add potatoes to mixture, add milk, red pepper flakes and cheese and ham.  Throw in a few dashes of pepper, heat to boiling.  Now cover and simmer on low heat for 30 minutes.  The soup will thicken.  Serve immediately or my favorite is to turn off heat let it sit a few hours to really thicken and then reheat to serve
